S Vins No Hay Tregua

Introducing the latest addition to the S Vins family, 'Remi Wildbunch,' marking the beginning of a new chapter. 'No Hay Tregua' is the inaugural white wine in this series. 'Remi Wildbunch' pays homage to the 80s and 90s era, embodying rock, comics, and the essence of freedom and rebellion. Each wine in the collection undergoes a distinct process, carries a unique name, and features an individual label. Similar to comic book panels, every Remi character on each label showcases a different action, ensuring each wine is a limited edition. Founded by Mallorcan winemaker Carlos Rodríguez Furthmann, S Vins is a boutique winery nestled in the Sierra Norte of Majorca, known for its traditional winemaking techniques that prioritise local grape varieties and minimal wine manipulation. Pioneering the natural and minimal intervention wine movement in the Balearic Islands, S Vins introduced groundbreaking concepts such as the first island ancestral (pet-nat), the first clarete, and the use of chestnut barrels, alongside single varietals of indigenous grapes featuring spontaneous fermentation. 'No Hay Tregua' is a fusion of 4 indigenous white grape varieties sourced from an environmentally conscious vineyard with official certification. The grapes were harvested by hand in 15kg boxes. The first selection of grapes took place in the vineyard, and the second selection took place in the vineyard, bunch by bunch. The selected grapes were then destemmed, pressed and fermented in stainless steel tanks. The wine spent several months on its lees.This wine undergoes spontaneous fermentation, contains no added sulfites or additives, remains unclarified and unfiltered, echoing the label's promise of pure grapes and nothing more.TASTING NOTESPalate: This wine recalls notes of apple, apricot, peach, pineapple, lychees, grapefruit, toasted almonds, and lemon peel. It is fresh, lactic, and long in the mouth.Pairing: Enjoy this wine with oysters, grilled fish, battered squid, pork tenderloin, baked potatoes, battered cauliflower,  stuffed mushrooms, asparagus, apple pie, and baked apples.
