S Vins is the personal project of veteran Mallorcan winemaker Carlos Rodriguez Furthmann. His small winery is located in the Sierra Norte region of Mallorca and his artisan wines are created using minimum manipulation. He also prioritises the use of indigenous grape varieties. Carlos was the first winemaker in Mallorca to create a Clarete wine. Mallorcan native grapes are used to create this Clarete wine. It is made according to the classic and traditional methods, with 80% white must and 20% red grapes with their skins. The local white grapes come from a vineyard in Manacor, and the local red grapes are harvested from a vineyard in Biniali. The winemaking process involves spontaneous fermentation. Nothing is added to the wine apart from a small number of sulphites. The wine is not clarified or filtered. Production: 1200 bottles. TASTING NOTESPalate: Mandarin, strawberry plant, blackthorn, pear,s blood orange, grapefruit, and fennel all come to mind in the taste. This is a creamy, fresh and light wine. Pairing: Sushi, smoked salmon, paella, noodles, carbonara, artichoke, avocado, guacamole, octopus, steamed mussels, crab, lobster, creams and sauces, tumbet, and pumpkin... used with creativity and imagination.
