Tempranillo grapes are used to create Maisulan Sobremoro. Luis and Eva (the owners of Maisulan) prefer not to work the soil around the vines and they also follow several principles of Fukuoka, as well as incorporating other biodynamic methods. The Tempranillo grapes are manually harvested, destemmed, and fermented at a maximum of 25ºC. Only autochthonous yeasts are used. Maceration takes place for 20 days. The wine then remains in 100% French oak barrels, second use, for 18 months. Here's a taste of what you can expect from this wine:Aromas: Sobremoro is a rather mature wine with a hint of plums. Palate: This is a rich, fleshy wine with some nice tannins and a good length.Pairing: Enjoy this red wine with pot roast dishes.
