Rostoll by Cas Quitxero is an orange (Brisat) wine that uses 100%, Giró Ros. 60% of the Giró Ros grapes come from the Santa Maria del Camí area, es Raiguer, where there are loam soils of Call Vermell with a good percentage of gravel.  The grapes were harvested during the last week of August. 40% of the Giró Ros grapes come from Llubí, the island's centre, which has deep, silty-loam soils and good moisture retention.  These grapes were harvested during the first week of September.  The grapes were vatted and crushed separately, and the stems were removed by hand.  20% of the bunches were left as whole clusters.  The grapes underwent several days of cold pre-fermentation maceration.  Spontaneous fermentation occurred at a controlled temperature between 22 to 25ºC, with a delicate manual punching down, and an extraction check through a daily tasting. A light pressing followed and the end of fermentation was without the skins.  Once the fermentation had calmed down, the two wines were blended in a 400-litre used chestnut barrel where they remained for 5 months for refining. The wine was then transferred to a stainless steel tank for the precipitation of coarse solids.  It was lightly sulphated, without fining or filtering, and bottled by gravity for a minimum of 5 months in the bottle.
