7103 Petit Celler Ancestral Rosat is a sparkling rosé wine made with the Mallorcan variety Callet and per the traditional ancestral method. The team at 7103 carry out a manual harvest of their vines and select the grapes, cluster by cluster, in the winery. The Callet grapes are gently pressed to obtain a very subtle colour, as well as the pleasant aromas of fresh red fruit. Afterwards, fermentation takes place in stainless steel tanks until the sugars decrease to about 20 g / L. It is then bottled and fermentation continues to obtain the gas characteristic, due to the action of the yeasts. Here's a taste of what you can expect from this wine:Appearance: This Ancestral wine is light pink with orange reflections. It is clean and bright, with a very fine bubble. Aromas: On the nose, there is a gentle aroma of red fruit accompanied by hints of cream brioche, due to the ageing with yeast. Palate: To taste, it is subtle, fresh, and refreshing. The fine bubbles are very well integrated. This is a very versatile wine, that can accompany any meal and, in particular, desserts.
